A gluten free lifestyle has many benefits.
A calmer and happier gut is one of them. Living with an efficient digestive system is life changing. Imagine: no more bloating, constipation, or diarrhea. Instead, your system easily eliminates waste in a productive morning bowel movement. You are free and clear to enjoy the rest of your day without a thought about it.
Going gluten free is one major piece to making this dream a reality.
But, gluten is the ultimate comfort food! Sadly today’s gluten has chemicals that weren’t even invented when my Grandma was a child. The overload of chemicals has made modern gluten toxic for some people. There is nothing comforting about that.
I wrote this recipe because I needed a quick way to bake muffins for myself that I know are gluten free, and that have quality ingredients that contribute to my health and well being.
I hope you enjoy! Remember, baking can be a soothing activity, even if it’s not something you are used to doing. So, turn on some music and enjoy creating your very own gluten free muffins.
Ingredients
Dry:
1 cup almond flour
1/2 teaspoon aluminum free baking powder
1/4 teaspoon sea salt
Wet:
1 organic egg
1/2 teaspoon organic vanilla extract
3 tablespoons real maple syrup
2 tablespoons plus one teaspoon of coconut oil
Method
Preheat oven to 350.
Mix all the dry ingredients in a medium large mixing bowl. Set aside.
Whisk egg in a bowl. Add vanilla and coconut oil and whisk again until blended. If your oil is on the solid side, that’s OK. It will just be a little lumpy after you whisk, but that will bake out. Then add the syrup, and whisk again.
Add the wet ingredients into the dry ones. Mix thoroughly. Spoon the batter into a muffin tin lined with parchment cups. Fill the cups about three quarters full.
Bake for 13 or 14 minutes, until a fork comes out clean.
Now you have a high protein snack. Don’t be afraid of the fat. Healthy fats, in moderation, will lubricate your digestive tract. Fat stores on the body when we have excess sugar, or when our hormones are out of whack, or if we eat way too many calories. Healthy fats in the diet are a pillar to good health!
