Dear Reader,
Today, I offer you two side dish recipes that you can add to your holiday table:
Herb Potatoes
Ingredients
4 or 5 Yukon gold potatoes
1 cup homemade bone broth Broth Recipe (Or use a quality boxed broth like Kettle and Fire)
1 tablespoon fresh thyme leaves for garnish
Sea Salt
Method
Preheat oven to 450.
Scrub your potatoes. Chop them into cubes. Place them in a stock pot and cover with cold water, about an inch above the potato line. Add a teaspoon of salt. Bring to a boil, covered.
Once you have a good boil, reduce to medium low heat. Cook until potatoes are easily pierced with a fork, but not mushy – around 20 minutes.
Put potatoes into a glass baking dish. Cover with the broth. Add a teaspoon of salt, sprinkled over the top.
Cook in your heated oven for around 30 minutes, until the broth has been absorbed by potatoes.
Remove from oven, place in a serving dish, and add thyme over the top.

Glazed Yams
Ingredients
2 extra large garnet yams
2 tablespoons ghee
2 cups homemade bone broth
Sea Salt
Method
Preheat oven to 450.
Peel your yams.
Chop them into discs. If the discs are extra large, chop those in half.
Melt your ghee.
Place yams on a rimmed baking sheet. I like stainless steel baking sheets.
Pour ghee over yams. Sprinkle salt over the top.
Place in oven for 20 minutes.
Remove yams from oven, and flip them over.
Pour broth over the yams. If it seems the broth will spill over your sheet, use slightly less. (I have a baking sheet with a tall enough lip to allow 2 cups broth)
Place back in oven for 25 minutes. After this, turn your oven to high broil.
Broil for 5 minutes until yams have a carmelized look.

Note: I teach that each person has a unique right way of eating. Literally! Every person is unique.
Some people don’t tolerate potatoes well, as they are from the nightshade family.
I recommend eliminating them for a few weeks during an elimination diet (best undertaken with the help of a health consultant).
For me, potatoes are an amazing food, and I have kept Hashimoto’s at bay while continuing to enjoy them.
Yams work for most people.
I believe that getting to a place of being able to tolerate all vegetables is attainable for most, and is desirable.
